Cette m\u00e9thode ancestrale transforme le chocolat fondu en une cr\u00e9ation brillante, croquante et fondante \u00e0 souhait.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Qu&rsquo;est-ce que le temp\u00e9rage ?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Le temp\u00e9rage consiste \u00e0 faire passer le chocolat par diff\u00e9rentes temp\u00e9ratures pr\u00e9cises pour stabiliser les cristaux de beurre de cacao. Sans cette \u00e9tape cruciale, vos chocolats resteraient ternes, friables et fondraient rapidement entre vos doigts.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">La m\u00e9thode traditionnelle sur marbre<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Dans notre atelier, nous privil\u00e9gions la technique sur table de marbre, h\u00e9rit\u00e9e de g\u00e9n\u00e9rations de ma\u00eetres chocolatiers. Le chocolat est d&rsquo;abord fondu \u00e0 45-50\u00b0C, puis vers\u00e9 aux deux tiers sur une surface froide en marbre o\u00f9 il est travaill\u00e9 \u00e0 la spatule jusqu&rsquo;\u00e0 atteindre 27\u00b0C. Cette temp\u00e9rature permet la formation des cristaux stables. Enfin, on r\u00e9incorpore le chocolat refroidi au reste du chocolat fondu pour remonter \u00e0 la temp\u00e9rature de travail id\u00e9ale : 31-32\u00b0C pour le chocolat noir, 29-30\u00b0C pour le chocolat au lait.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Les signes d&rsquo;un bon temp\u00e9rage<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Un chocolat parfaitement temp\u00e9r\u00e9 se reconna\u00eet \u00e0 sa brillance \u00e9clatante, son claquement sec lorsqu&rsquo;on le casse, et sa texture lisse sans traces blanches.
