Cette recette authentique vous permettra de cr\u00e9er des truffes dignes des meilleures chocolateries, avec une touche de fleur de sel qui sublime l&rsquo;amertume du cacao.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingr\u00e9dients (pour environ 30 truffes)<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>250g de chocolat noir 70% de qualit\u00e9 sup\u00e9rieure<\/li>\n\n\n\n<li>150ml de cr\u00e8me liquide enti\u00e8re<\/li>\n\n\n\n<li>30g de beurre doux \u00e0 temp\u00e9rature ambiante<\/li>\n\n\n\n<li>1 cuill\u00e8re \u00e0 caf\u00e9 de fleur de sel<\/li>\n\n\n\n<li>Cacao en poudre non sucr\u00e9 pour l&rsquo;enrobage<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Pr\u00e9paration de la ganache<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Commencez par concasser finement le chocolat et placez-le dans un saladier. Portez la cr\u00e8me \u00e0 fr\u00e9missement sans la faire bouillir, puis versez-la en trois fois sur le chocolat en m\u00e9langeant doucement du centre vers l&rsquo;ext\u00e9rieur avec une spatule. Cette technique permet d&rsquo;obtenir une \u00e9mulsion parfaite et brillante.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Lorsque le m\u00e9lange atteint 35\u00b0C, incorporez le beurre en morceaux et la fleur de sel. M\u00e9langez d\u00e9licatement jusqu&rsquo;\u00e0 obtenir une texture homog\u00e8ne et soyeuse. Roulez-les rapidement entre vos paumes l\u00e9g\u00e8rement farin\u00e9es de cacao pour former des truffes irr\u00e9guli\u00e8res, puis enrobez-les g\u00e9n\u00e9reusement de cacao en poudre.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le contraste entre l&rsquo;amertume du cacao, la douceur de la ganache et le croquant de la fleur de sel cr\u00e9e une exp\u00e9rience gustative inoubliable.
